Caramelised Onion Relish

Ingredients

1kg Brown onions, sliced

2 tbls Olive Oil

⅓ cup Brown Sugar

⅓ cup Balsamic Vinegar

1 tsp Sea Salt

Black Pepper, cracked

Method

Heat the Olive Oil in a heavy based pot over medium heat, add the onions and cook for 10-15 minutes, stirring frequently until the onion is soft.

Reduce the heat to low, add the sugar & balsamic vinegar, season with sea salt and pepper, cook for 15 minutes or until the onions are caramelised and the sauce thick.

Store in sterilised jars
